Quebec city was the closest we could afford for our European trip with our very small honeymoon budget and I have to say that it was marvelous. Streets with cobblestones great French food a cozy romantic B&B and an endless variety of crepes is all they can dream for.
Our 16th anniversary is tomorrow and these almond flour crepes will definitely fulfill the need for a delicious dessert. I’ve been looking forward to recreating this delicious meal for so long, but I’m glad these keto crepes are special in the way that they are truly as wonderful as I remember them to be.
What is a Crepe?
A crepe is a pancake that is very thin. Crepes are usually served with sweet or savory fillings or toppings as they are rather bland. With just butter with a sprinkle of cinnamon, they become mouthwatering. Crepes are one of the top low carb recipes i enjoy all year long.
Pancakes are slightly thicker compared to crepes. The former is usually served with crème, maple butter, and sugar on top. While the latter is mainly stuffed with different fillings. Both are cuisines of a western culture. The preparation of both pancakes and crepes use similar ingredients, namely salt, butter, milk, eggs, and wheat flour.
Ingredients in Keto Crepes
Almond flour: Almond flour especially fine texture works perfectly for pancakes, cakes, and waffles. When it comes to coconut flour, that depends on you. If you do try them out with coconut flour, keep in mind that a third of the amount should be used instead of almond because coconut flour soaks up far more liquid.
I have not used this recipe with coconut flour so I cannot comment on the result. Along with this I would also recommend adding a few pinches of xanthan gum as a binder.
Vanilla: Vanilla enhances the overall flavor profile of any baked goods or desserts.
Sugar-free sweetener: In my recipes I prefer blending xylitol, erythritol and stevia in all my dishes.
For someone like me who tends to shy away from foods that require hefty budgets this sweetener saves the day. You can get this pre-mixed from Trim Healthy Mama’s website or you can mix your own vanilla almond based on my recipe.
By combining sugar alcohols with stevia you only require half the amount of sugar than what is needed. Due to their high prices these sweeteners help manage my food expenses.
Unsweetened Almond Milk: Plain or Vanilla work here – alternatively you can use coconut milk or another nut milk that comes in a carton.
Eggs: An ingredient that serves as a binding element in my keto crepes recipe.
Salt: Just a tiny amount enhances other tastes.
Preparing Keto Crepes
It’s very simple to make your low carb keto crepes gluten free by using an almond flour based instead of a white wheat flour based. Other ingredients are pretty much the same as in a traditional crepe.
Step One: I simply place all the ingredients for the crepe batter into my blender. The batter takes only a few seconds to prepare and they are always perfect.
Step Two: Then turn on the heat of your non stick skillet to medium and pour batter while swirling. Your skillet should be hot. Once the edges look dry flip over. Don’t worry if the first few crepes don’t look perfect practice makes perfect. They’ll still taste amazing.

What Should I Serve with Crepes?
Crepes can either be served with sweet sauce, a savory sauce or both. They can also be served as a dessert by folding it into quarters stacking the pieces on top of one another, topping it off with a dollop of vanilla ice cream, and drizzling chocolate syrup over the stack.
If you prefer to make them as a savory dish you can use cheese for the filling and then fold it into quarters for an appetizer.

Whipped Cream and Caramel Sauce – Caramel so sweet and sticky can be combined superbly with whipped cream.
‘Sugar’ and Cinnamon – A roll of crepe with a blend of butter, cinnamon, and a dash of one’s sweetener goes for a wow taste.
Maple Syrup and Blueberries – How about pouring on some sugar-free keto pancake syrup with fresh blueberries?
Savory Crepes
This recipe can easily be changed into a savory casserole if you do not add any sweet enhancer or vanilla. One of our favorite fillings for savory crepes is scrambled eggs with ham and cheddar cheese.

Caprese – Some tomatoes, basil, and mozzarella can give the center an exciting surprise!

How To Freeze Your Crepes
Absolutely! If you put leftover crepes in a zip-lock bag and make sure they are kept cold, you will be able to freeze them. To use them, make sure to take the bag out of the freezer and put it in the fridge 15 minutes and serve room temperature. After that wrap the crepe in aluminum foil and place them in a warm oven for only two minutes. This will ensure that the best taste and texture is achieved.

Ingredients
2 cup almond flour
1.33 cup unsweetened almond milk
6 large eggs
2 tsp vanilla
2 tbsp Joy Filled Eats Sweetener (or see alternatives in recipe notes)
Pinch salt
Directions
- Add ingredients to blender and blend until smooth and creamy. The mixture should be runny.
- Put skillet on stove and set to medium. Spray with oil once heated to avoid batter sticking. Pour 1/4 cup of batter into the center.
- Carefully grab the skillet handle and circle the batter. This will create a thin layer.
- Cook it on one side, for two minutes or until it begins to turn golden brown. Then, with a spatula, flip it over and cook the other side for one minute. Once done, remove from the heat.
- Continue to repeat this process until there is no batter left.
- Pair it with your preferred toppings.
Notes
- Notes on Sweeteners: Xylitol, erythritol, and stevia are combined in my recipes. These sweeteners are twice as sweet as sugar. Gentle sweet and Truvia contain the same substances.
- When switching out Swerve or Lakanto Monk Fruit use 1.5 more than the recommended sweetener.
- When using Pyure or Trim Healthy Mama Super Sweet use half the recommended amount of sweetener.
- These substitutes work in all recipes but do not work when cooking candy, such as caramel.
