Ingredients

  • 27 oz full-fat coconut milk

  • 3/4 cup Sweetener

  • 2 tbsp coconut oil

  • 2 oz raw cacao butter

  • 1 tsp vanilla extract

  • 1 tbsp banana extract

  • 1/2 ripe banana optional

  • pinch salt

  • thin slices of ripe banana optional, to garnish

Directions

  • In a medium saucepan combine the coconut milk, sweetener and coconut oil. Let it merge over moderate heat until it begins to almost boil. Then reduce the heat to medium low or low, allowing it to slightly boil for about an hour, mixing the concoction every 10-15 minutes until it has decreased to half its previous volume.
  • Pour the hot, reduced coconut milk mixture over the cacao butter until it is thick and smooth which is then blended with banana extract soaked in salt before being placed in a blender. Continue mixing the ingredients together along with a fresh banana by cutting it up; place the mixture into a glass dish and put it in the freezer for four hours.
