How to Make Keto Pizza Casserole
1. Prep the zucchini:
Salt the shredded zucchini and let it sit for half an hour. Then squeeze the moisture out and place the zucchini in a different bowl.
2.Cook the sausage:
Place a skillet on medium flame and proceed to prepare the sausage by breaking it into small pieces. This process should take approximately 8 minutes. Remove the sausage using a slotted spoon and put it in the bowl that contains the zucchini.
3.Preparation of the Casserole:
Combine sausage and zucchini and stir them together. Pour this mixture into a small casserole or 2 8-ounce ramekins.
4.Top the Casserole:
Pour marinara sauce on the base followed by cheese and put your favorite toppings onto the cheese layer. Sprinkle some cheese on the top to keep everything intact.
5.Cooking Instructions:
The casserole can be air-fried at 350°F for 8-12 minutes, or alternatively, it can be baked in the oven at 375°F for around 10-15 minutes.

- Ground meat is usually sold in one-pound packs. If there is excess meat, you can freeze it after dividing it into three parts, or alternatively, you can cook all of it and refrigerate half. Precooking provides a good advantage because this recipe can then be prepared quite quickly.
- To accommodate six people, expand the portion size by one more pound of ground meat and bake it in a wide two quart casserole dish.

Ingredients
3 cup (339 g) packed shredded zucchini
0.75 tsp (0.75 tsp) salt
1 lb (453.6 g) bulk Italian sausage
.75 cup (177.45 ml) marinara sauce
1.5 cup (168 g) shredded mozzarella, (about 2 ounces)
1.5 ounce (42.51 g) sliced pepperoni
0.38 medium green pepper, thinly sliced
6 small mushrooms, thinly sliced
Directions
- Season the zucchini with salt let it sit for 30 minutes to release the water. After that transfer to a medium-sized bowl after squeezing the zucchini to remove the water.
- Over medium heat stir and cook the sausage for about 8 minutes, gradually breaking the lumps with the back of a spoon until fully cooked. Finally use a slotted spoon to transfer the sausage into a bowl.
- Combine the sausage and zucchini then spread the mixture evenly in small casserole dishes or two 8-ounce ramekins.
- Next cover the sausage mixture with marinara sauce followed by cheese and the desired toppings. Ensure to reserve a little cheese to help keep the toppings in place.
- Preheat the air fryer to 350 degrees Fahrenheit for 8 to 12 minutes. Alternatively bake in a 375 degree Fahrenheit oven for 10 to 15 minutes.
Notes
- This dish is flexible in measurement you can adjust depending on demand. For family portions prepare it inside a 9’13 casserole dish for single portions use 8-ounce ramekins. These can also be ideal for lunches as they are easy to prepare in advance.
- Refrigerate the remaining food in a tightly sealed jar which is good for five days. For months this can also be frozen. Just remember to allow it to thaw and reheat in either the microwave or over an oven.
