Gluten-Free Cinnamon Rolls Recipe

I cannot believe my self and am excited to share the recipe for gluten free cinnamon rolls which are super easy to make. It took quite a while for me to come up with the step by step instructions of this burnt breakfast delicacy.

I carefully made sure that the process of making this yeast dough was simple enough and rose to the occasion. After running ample tests, I can assure you this recipe yields a better than Cinnabon taste and can be made from the comfort of your kitchen!

Cinnamon rolls are quite possibly, one of the most enjoyed sweet Delights. They are primarily associated with baking and having them on festive days like Easter or Christmas is considered to be a norm for a majority of families. But who says you need to save these for special occasions? These cinnamon rolls are delightful for breakfast or even brunch.

Ingredients

1. Sugar: Granulated sugar activates the yeast and sweetens the dough. Brown sugar gives the filling a rich sweetness, while powdered sugar makes the frosting delectable.

2. Milk: Makes the dough moist. For those who don’t consume dairy, unsweetened almond milk is a great substitute.

3. Instant Yeast: This ingredient is required for the formation of foam within the dough and making the rolls fluffy and soft. Fleischmann’s RapidRise and Red Star QuickRise are great brands for these types of yeast.

4. Unsalted Butter: It increases the richness of the doug, binding the cinnamon filling and makes the frosting smooth. Not limited to dairy butter, vegan butter such as Smart Balance also works.

5. Eggs: They function as a binding agent in dough and improve its nutrient composition. As an alternative, Bob’s Red Mill gluten free egg replacer is a wonderful choice for egg free diets.

6. Apple Cider Vinegar: It helps achieve a moist and soft butter. Alternatively, you may use lemon juice.

7. Gluten-Free All-Purpose Flour with Xanthan Gum: (Yeast Baking Recommended) – Better Batter original, artisan and Pillsbury’s gluten free are easily accessible and work well. However, it should be noted that results differ based on usage of gluten free flour because not all blends are meant for yeast baking.

8 Baking Powder: It provides for additional leavening for the rolls to fluff up beautifully.

9. Salt: Salt enhances the taste of the frosting and the dough.

10. Heavy Whipping Cream: It makes the rolls incredibly soft and moist. Other options include half and half, full fat canned coconut milk unsweetened almond mil and whole milk.

  • When there are cracks in the dough, seal them with warm water. You can do so by smoothing your fingers over the cracks after dipping them in warm water.
  • When rolling the dough, maintain a tight enough grip so that it does not lose its stance, however, gentle enough to avoid any fillings from spilling out. A soft grip does the job nicely.
  • Make use of flavorless dental floss to slice the dough into equal rolls. This technique will ensure the dough remains free from any squeezing or pressing.
  • The rolls should be allowed to rise in the oven as it is warming up. Just remember to set a timer and start the baking once the oven is warmed up to the suitable temperature.

So, Why Didn’t My Dough Rise?

If your dough does not rise, expired yeast or baking powder might just be the problem. It is imperative to check the expiration dates on both products. Also, activating the yeast too hot may harm it. If the yeast mixture does not bubble in step two, toss it out and replace it with a fresh batch of yeast.

Can I prepare this recipe in advance?

Of course, the cinnamon rolls can be started beforehand. All that is required is covering them in a plastic wrapper and putting them inside the fridge overnight. When it’s time to bake, allow them to heat up a little. Remove the wrapper and put the rolls on the mid oven rack, follow the second level of instruction provided in the recipe to complete.

Storage Instructions

Refrigerator:

Any cinnamon rolls left over should be kept in an airtight container. They may be stored at room temperature for two days if they are either plain or iced, but may be refrigerated for up to four days if they are frosted. After that, reheat them in an oven at 350°F for 10 to 15 minutes, or for 20 to 30 seconds in the microwave.

Freezer:

With these cinnamon rolls, you get the option to freeze them before or after they are baked.

Before Baking: Once you have rolled the dough and cut it into pieces, freeze it. Cover the pan with foil and place it in the freezer for one month. When you’re getting ready to bake them, take the pan out of the fridge and place it on the counter to let the dough reach room temperature overnight. After this, continue with the recipe from the second rise.

After Baking: Leave the baked rolls to cool and then wrap it with foil, place it into a freeze bag or a container for two months, and will be fine; thaw them to room temperature and leave in an oven at 350°F for 10 to 15 minutes or in the microwave for 20 to 30 seconds.

Ingredients

  • Gluten-Free Dough

  • 1/2 cup granulated sugar

  • 1 cup milk, warmed to 100-110°F

  • 1 tablespoon instant yeast

  • 1/4 cup unsalted butter

  • 2 large eggs

  • 1 teaspoon apple cider vinegar

  • 3 1/4 cups gluten-free all-purpose flour with xanthan gum

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/2 cup heavy whipping cream

  • Cinnamon Filling

  • 1/4 cup unsalted butter, softened

  • 1/2 teaspoon pure vanilla extract

  • 1 cup brown sugar, packed

  • 1 1/2 tablespoons ground cinnamon

  • Cream Cheese Frosting

  • 6 ounces cream cheese

  • 1/3 cup unsalted butter

  • 2 cups powdered sugar

  • 1 teaspoon pure vanilla extract

  • 1/8 teaspoon salt

  • Vanilla Icing

  • 2 cups powdered sugar

  • 5 tablespoons milk

  • 1 teaspoon pure vanilla extract

Directions

  • For the Rolls:
    In a large bowl, pour warm milk and then add sugar and stir until combined.
  • Add instant yeast over the milk mixture, set a towel over it, and let it bubble for 1-2 minutes.
  • In a small bowl, whisk room temperature eggs. Add the whisked eggs along with the apple cider vinegar to the mixing bowl and mix.
  • Gluten-free flour, baking powder, and salt are to be added to the mixing bowl.
  • Add melted butter to the flour mixture. Using a paddle attachment, mix for 1-2 minutes and then scrape the sides of the bowl.
  • Using a dough hook, mix on medium speed for 3-5 minutes. The dough should pull from the sides of the bowl – do not add any flour.
  • Put dough in a greased bowl and cover it with plastic wrap while setting it aside.
  • While the dough is resting, pour 2 cups of water into a bowl and set it in the microwave for 2 minutes. After that, cover the towel and let the dough rise for 20 minutes.
  • To prepare the filling, combine the softened butter and vanilla extract in a small bowl and mix them until smooth.
  • Then, in a separate bowl, combine both brown sugar and cinnamon.
  • Lightly grease parchment paper with a baking spray or oil. Then place the risen dough on it, sprinkle with gluten-free flour, and form it into a rectangle. Finally, roll the dough to a thickness of half an inch so that it measures 12 by 14 inches.
  • With a spatula, spread the butter mixture on the rolled out dough and ensure it is evenly distributed.
  • The cinnamon sugar mixture should be poured on the top and gently pressed down.
  • Fold it over on the longest side of the dough while using the parchment edge to roll it tightly into a log.
  • Place a piece of dental floss under the dough log and lift the floss upwards to make a clean cut in the middle. Then make another cut with the floss around each half into six rolls.
  • Put the rolls into the baking pan that has been treated with cooking oil.
  • Once ready, pour it over the rolls and place them into the oven.
  • Heat the cream in a microwave for around thirty seconds. After that, pour the warmed cream over the rolls. From there, set the rolls into the center of the oven and turn on the heat to three seventy-five. The oven will need to be warmed up for a second rise and while waiting around 15 minutes check the rolls to see if they have lightly browned.
  • While frosting them, give the rolls some time to cool off.
  • For the Cream Cheese Frosting:
  • In a medium-sized bowl, mix cream cheese, butter, vanilla extract, and salt until they become smooth. Afterwards, mix in the powered sugar stepwise, one cup at a time, and ensure the mixture is thick. Spread when it is at room temperature. Apply the mixture with a spatula to freshly baked rolls.
  • For the Vanilla Icing:
  • Mix all components in a medium bowl until mixture is smooth. Cover the warm cinnamon rolls with the blend.

  • Gluten-Free Flour Matters – Different brands yield different results. Check the brand’s site for yeast baking suitability.
  • Rolling & Cutting – Flour your rolling pin, don’t roll too thin, and use unflavored dental floss for clean cuts.
